Ingredients:
2 Large Russet Potatoes2 Tablespoons Olive Oil8 Medium Garlic Cloves2 Teaspoons Kosher SaltPreheat oven to 475 degrees F. Arrange a rack in the upper level of the oven. Peel the potatoes and cut into ½-inch-wide slices lengthwise and then cut the slices in half crosswise. In a bowl of hot water, soak the potato slices for about 10 minutes. Meanwhile, mix together oil and garlic in a small pan over medium-low heat and cook till aromatic, stirring continuously. Remove from heat and keep aside to cool. Drain potatoes and with paper towels, pat dry completely. Place potatoes onto a baking sheet and drizzle with garlic oil. Sprinkle with 1 teaspoon of salt and toss to coat well. Arrange the fries in a single layer. Bake for about 40 minutes, stirring once after 25 minutes.Remove fries from oven and sprinkle with remaining salt evenly. Serve immediately
