Almond CookiesPT35M Serves 12+ Ingredients: 1 Cup Almond Meal 1.25 Cups All-Purpose Flour 0.66 Cup Plus 1 Tablespoon Granulated Sugar 0.25 Teaspoon Salt 1 Teaspoon Baking Powder 1 Teaspoon Baking Soda 0.66 Cup Vegetable Oil 1 Egg Yolk 0 Roasted Unsalted Almonds Preheat the oven to 350 degrees. Arrange a rack in the center of the oven. Line 2-3 cookie sheets with parchment paper. In the bowl of a stand mixer with the beater attachment, add flours, sugar, baking soda, baking powder and salt and, mix on medium-low speed until well combined. Add oil and mix until a dough is formed. Make small balls from the dough. With your finger, press 1 almond into each ball, pressing the ball slightly to shape like a cookie. Arrange cookies on prepared cookie sheets, about 1-inch apart. With a pastry brush, coat each cookie with beaten egg yolk lightly. Bake for about 15-20 minutes or until the cookies become slightly golden. Remove from oven and keep cookie sheets onto the wire racks to cool in the pans for about 5 minutes. Carefully, invert the cookies onto the wire rack to cool completely.
