Ingredients:
1 Teaspoon Coriander Seeds3 Teaspoons Vegetable Oil1.5 Cups Yellow Lentils6 Cups Vegetable Broth1 Cup Fresh Coriander Or Cilantro1 Tablespoon Fresh Lime Juice2 Teaspoons Fresh GingerHeat 2 teaspoons of oil in a medium saucepan over medium heat and sauté coriander seeds just for 1 minute. Add lentils and broth and bring to simmer. Reduce heat, cover and cook for 40 to 45 minutes or until lentils are tender and completely cooked. Stir in 1 teaspoon of salt when liquid is almost absorbed and soup is thickened.
In a food processor, pulse together lime juice, cilantro, ginger and remaining 1 teaspoon oil until finely chopped.
Top soup with chutney and serve.
