Asparagus & Mushroom Sauté With Parmesan CheesePT40M Serves 4 Ingredients: 1 Tablespoon Olive Oil 0.5 Large Onion 0.5 Cup Low Sodium Vegetable Broth 4 Cups Asparagus 8 Ounces Mushrooms 2 Cloves Garlic 0.25 Cups Fresh Basil 2 Large Roma Tomatoes 0.5 Cup Parmesan Cheese In a large skillet, heat oil over medium-high heat and cook onion for about 5 minutes or until softened. Add 1/4 cup broth and stir to combine well. Add asparagus, mushrooms, basil and garlic and sauté for 5-8 minutes or until vegetables are crisp-tender. Slowly, add remaining broth. Stir in tomatoes and cook for about 3-4 minutes. Remove from heat and serve with parmesan cheese.
