0.25 Cup Extra-Virgin Olive Oil2 Large Yellow Onions2 Large Shallots1 Teaspoon Dried Thyme1 Teaspoon Salt & Freshly Ground Black Pepper2 Tablespoons Sherry Vinegar1 Cup Dry White Wine2 Teaspoons Onion Powder0.25 Cup Fresh Chives1 Cup Sour Cream1 Cup Greek YogurtPreheat oven to 425 degrees. In a cast iron skillet, heat the olive oil over medium-high heat and saute the sliced onions, shallots, and thyme, about 5 minutes. Season with a 1/2 teaspoon of salt and pepper. Transfer the skillet to the oven and roast for 30 minutes, or until the onions are golden brown.Deglaze the skillet, with the vinegar and wine and roast for another 15 minutes.Transfer the onion mixture to the bowl of a food processor until smooth, and transfer to a clean bowl. Combine the onions, with the onion powder, chives, sour cream and yogurt and stir to combine well. Season with the remaining salt & pepper.
