0.75 Cup All-Purpose Flour2 Tablespoons Powdered Sugar0.25 Cup Powdered Sugar3 Tablespoons Pine Nuts0.125 Teaspoon Salt2 Tablespoons Chilled Unsalted Butter2 Tablespoons Canola Oil0.75 Cup Granulated Sugar2 Tablespoons All-Purpose Flour1 Teaspoon Lemon Rind0.5 Cup Fresh Lemon Juice2 Large Eggs1 Large Egg WhitePreheat oven to 350 degrees. Grease a glass baking dish with cooking spray.For crust: in a food processor, add 3/4 cup of flour, pine nuts, 1/4 cup of powdered sugar and salt and pulse till well combined. Add canola oil and butter and pulse till a coarse meal like mixture is formed. Place mixture into prepared baking dish evenly and press to smooth the surface. Bake for about 20 minutes or till lightly browned. Remove from oven.Now, reduce the temperature of oven to 325 degrees.In a bowl, add granulated sugar, 2 tablespoons of flour, egg, egg whites, lemon rind and lemon juice and with a whisk, beat till smooth. Place mixture over prepared crust evenly. Bake for about 20 minutes or till set. Remove from oven and transfer onto a wire rack to cool completely in pan.Refrigerate, covered for at least 2 hours before serving. Cut into desired sized squares. Sprinkle with 2 tablespoons of powdered sugar and serve.
