0.5 Cup Butter Softened1 Cup Firmly Packed Brown Sugar2 Large Eggs1 Cup Mashed Ripe Bananas0.25 Cup Buttermilk1 Teaspoon Vanilla Extract2.25 Cups All-Purpose Flour0.75 Teaspoon Baking Soda0.5 Teaspoon Baking Powder0.5 Teaspoon Salt0.5 Cup Toasted Chopped PecansPreheat oven to 350 degrees. Lightly grease or line a 12-cups muffin tray. Beat softened butter with an electric mixer at medium speed until creamy. Now gradually add eggs, one at a time, blending well after each addition. Combine buttermilk with bananas and vanilla in a bowl. Stir together flour, baking powder, baking soda and salt in a bowl. Add buttermilk and flour mixture alternately to the butter and egg mixture, beginning and ending with flour mixture. Well-blend the mixture at low speed after each addition (you don’t want to overbeat the mixture here). Spoon batter into the muffin cups, 2/3 full. Sprinkle with pecans and bake 20 to 25 minutes. Let cool on wire rack before serving.
