3 Tablespoons Olive Oil2 Cloves Garlic1 Fresno Chile1 Pound Boneless Pork Loin Roast0.375 Teaspoon Kosher Salt0.5 Teaspoon Coarsely Ground Black Pepper1 Ounce Provolone Cheese1.5 Pounds Swiss ChardIn a pan, heat oil over medium heat and sauté garlic and Chile till they begin to sizzle. Remove from heat and keep aside.Season pork with salt and pepper evenly. Coat a grill pan with cooking spray and heat over medium-high heat. Add pork and cook for about 5 minutes, flipping once. Remove from pan and keep aside.In a large sautee pan, heat half of garlic oil mixture over medium-high heat and sauté Swiss chard for about 3 minutes or till just wilted. Place Swiss chard onto a platter and top with pork medallions. Drizzle with remaining garlic oil mixture. Serve with a light sprinkling of Provolone cheese.
