1 Shells Of 1 Cooked Lobster8 Tablespoons Unsalted Butter Per LobsterPreheat oven to 300 degrees F. Arrange lobster shells onto a largest baking sheet. Roast for about 15-20 minutes. Remove and set aside.Meanwhile, melt butter in a large bowl, arranged over a pan of simmering water. Stir the lobster shells in the melted butter and simmer gently for about 20 minutes, without boiling.Strain the melted butter through a cheesecloth-lined sieve into another bowl. Transfer the bowl into ice bath to chill. Refrigerate, covered till set. With a slotted spoon, skim off the top and discard any liquids.
