0.75 Cup Whole Unsalted Almonds3 Cups Old-Fashioned Rolled Oats0.5 Teaspoon Ground Cinnamon0.5 Cup Whole Salted Cashews0.25 Cup Coconut Oil0.5 Cup Pure Maple Syrup0.25 Cup Almond Butter1 Teaspoon Vanilla Extract1 Egg White0.5 Cup Semi-Sweet Choclate Chips1 Cup Dried Raisins Or Cranberries
Preheat oven to 300 degrees. Line a sheet pan with Silpat or parchment paper and set aside.
In a large bowl, add almonds, oats, cinnamon & cashews and toss until combined.In a small saucepan over low heat, add coconut oil, syrup and almond butter. Stir and simmer until blended, about 2 minutes. Allow mixture to cool for 5 minutes.In the same saucepan, whisk in vanilla and egg white. Pour mixture over nut mixture and toss to coat. Spread the nut mixture over the prepared sheet pan evenly. Bake for 45 minutes, stirring every 15 minutes.Remove mix and allow it to cool about 15 minutes. Stir in chocolate chips and fruit. Store in an airtight container for up to 3 weeks.
