0.75 Pound Gigli Di Semola0.5 Cup Grated Parmesan1 6-Inch Piece Stale Baguette4 Cloves Garlic0.5 Cup Extra-Virgin Olive Oil0.25 Cup Fresh Parsley6 Tablespoons CapersWith large holes of a hand grater, grate baguette to have about 2/3 cup. In a large pan of the lightly salted boiling water, prepare the pasta according to the package's directions. Meanwhile, heat oil in a large heavy skillet over medium heat and sauté garlic for about 2 minutes. Stir in breadcrumbs, capers and parsley and cook for about 1-2 minutes, stirring continuously. In a colander, drain pasta completely and immediately, transfer into a heated large bowl. Place capers sauce over pasta and gently, toss to coat. Sprinkle with Parmesan cheese and serve.
