2 Cans No-Salt-Added Cannellini Beans4 Ounces Meatless Mexican Chipotle Sausage1 Tablespoon Olive Oil1.5 Cups White Onion2 Medium Poblano Chiles3 Cloves Garlic2 Teaspoons Chili Powder1.5 Cups Water1 Teaspoon Ground Cumin2 Tablespoons Fresh Oregano2 Teaspoons Hot Pepper Sauce1 Can White Hominy0.5 Teaspoon Salt2 Tablespoons Scallions2 Medium Limes2 Tablespoons Fresh CilantroMash 2/3 cup of total bean using a potato masher or a fork. Heat oil in a large Dutch oven over medium heat. Stir in sausage and sauté for 4 minutes. Then add poblanos, onion and garlic and cook for 6 minutes. Add cumin and chili powder and cook for 30 seconds. Then add whole beans, mashed beans, oregano, salt, hot pepper sauce and hominy. Let boil, reduce heat, cover and simmer until slightly thickened or for 20 minutes.Add in cilantro and scallions. Serve topped with lime wedges.
