4 Large Skinless & Boneless Chicken Breasts2 Cloves Garlic0.33 Cup Good Quality Bourbon0.33 Cup Low-Sodium Soy Sauce3 Tablespoons Brown Sugar2 Tablespoons Hoisin Sauce1 Medium Lime2 Teaspoons Fresh Ginger2 Teaspoons Dark Sesame Oil0.25 Teaspoon Crushed Red PepperPound the chicken breast halves between two sheets of wax paper, until they are 1/2 inch thick. Meanwhile, prepare the marinade by combining soy sauce, brown sugar, hoisin sauce, lime zest & juice, ginger, seasame oil, red peper flakes, and minced garlic in a resealable bag.Add chicken breasts to the marinade and shake vigoursly to coat evenly, marinate for at least 1 hour, if not 4 hours. Shake occasionally to ensure an even marinade coating. Preheat a cast iron grill pan over high heat. Once preheated, turn off one burner (to create a cooler zone) and lightly grease the grill pan with a coating of cooking spray. Grill chicken on the hot side of the grill for 2 minutes per side, and then transfer to the cooler side of the grill for 5 more minutes of cooking, while covering with a tent of aluminum foil. Allow the chicken to rest for at least a few minutes before serving.
