2.25 Cups Milk8 Tablespoons Unsalted Butter1 Tablespoon Sugar1 Teaspoon Salt2.25 Teaspoons Active Dry Yeast2 Cups All-Purpose Flour0.75 Cup Whole Wheat Flour2 Large Eggs0.25 Teaspoon Baking SodaIn a small pan, add butter and milk over medium heat and until butter is melted. Stir in sugar and salt and remove from heat. Set aside to cool until lukewarm.In a large bowl, dissolve yeast in 1/2 cup of warm water and set aside until foamy.Add warm milk mixture to yeast mixture and stir to combine. Add flours and beat until well combined. With a plastic wrap, cover the bowl and allow to rise for 2-3 hours at room temperature. In the flour mixture, add eggs and baking soda and beat until well combined. Preheat the waffle iron and then lightly, grease it with some melted butter. Add about 1/2 cup of the mixture and cook until golden and crisp. Top with waffle with fruit and maple syrup.
