6 Medium Scallions1 Clove Garlic1 Tablespoon Fresh Ginger2 Teaspoons Low Sodium Tamari Sauce0.25 Teaspoon Red Pepper Flakes1 Medium Sirloin Steak0.25 Cup Water8 Ounces Napa Cabbage6 Ounces Carrots1.5 Teaspoons Sesame Oil3 Cups Cooked Short-Grain Brown Rice0.125 To Taste Salt4 Large EggsIn a bowl, mix together 1 scallion, garlic, ginger, tamari and red-pepper flakes. Add steak slices and coat with mixture generously.
In a pan of boiling water, add cabbage, carrot and remaining scallions and cook for about 2 minutes. Drain well and transfer into a bowl.
In a heavy-bottomed skillet, heat 1 teaspoon of oil on high heat. Remove the steak from ginger mixture, reserving it. Add steak and sear for about 1-1½ minutes from both sides. Transfer the steak into the bowl with veggies.
In the same skillet, heat remaining oil on medium heat. Add about 2 teaspoons of ginger mixture and stir fry for about 1-2 minutes. Stir in rice, sirloin mixture and salt. Add water and cook, covered for about 7-8 minutes. Uncover the skillet and with a spoon, carefully, make 4 wells in rice mixture.
Carefully, crack 1 egg in each well. Cook, covered for about 4 minutes or till desired doneness of eggs.
