Appam is a kind of Indian pancake made with rice and coconut milk or coconut. Here we use a mixture of cooked and raw rice along with fresh coconut and water flavoring with some fenugreek seeds, salt and sugar. Makes an excellent side for a spicy curry. Drain the rice completely. In a blender, add soaked rice, cooked rice, coconut and 2 cups of water and pulse until smooth. Transfer the rice mixture to a bowl and keep aside in a warm place for at least eight to ten hours. Transfer about 1/3 of rice mixture to another bowl. Add sugar, baking soda and salt and mix until well combined. In a skillet, melt butter. Add the desired amount of mixture and slowly rotate the pan to spread the mixture evenly. With a lid, cover the skillet and cook for about 40-50 seconds. Carefully, transfer appam to a platter. Repeat with remaining mixture. Serve hot.
