Add chicken and mix well. Cover and refrigerate overnight. In a Dutch oven, melt butter over medium-high heat and saute onions for 5 minutes, until softened. Stir in ginger, garlic, and cumin seeds and saute until onions are browned. Add cinnamon, tomatoes, salt & pepper and continue to saute another 10 minutes. Add chicken, marinade, and stock and bring to a boil. Reduce heat and simmer for 30 minutes. Meanwhile, grind almonds in spice grinder or food processor. Stir in tomato paste and cream and simmer for another 15 minutes. During last 5 minutes, add almonds and discard cinnamon stick. Serve with rice and a sprinkle of cilantro.
