0.66 Cup Greek Yogurt1.33 Tablespoons Ground Turmeric1 Medium Lemon1.33 Tablespoons Ground Cumin1.33 Tablespoons Garam Masala1.33 Pounds Boneless, Skinless Chicken Thighs0.13 Cup Clarified Butter1 Medium Yellow Onions2 Tablespoons Fresh Ginger2 Cloves Garlic0.66 Tablespoon Cumin Seeds0.5 Piece Cinnamon Stick1 Medium Tomatoes0.66 Teaspoon Kosher Salt1 Medium Fresno Red Chiles0.5 Cup Chicken Stock2 Tablespoons Almonds1 Teaspoon Tomato Paste0.5 Cups Heavy Cream0.13 Cup Cilantro LeavesIn a large bowl, combine 2/3 cup yogurt, 1 Tablespoon turmeric, lemon juice & zest, 1 1/3 Tablespoons cumin, and garam masala. Add chicken and mix well. Cover and refrigerate overnight.In a Dutch oven, melt butter over medium-high heat and sauté onions for 5 minutes, until softened. Stir in 2 tablespoons ginger, garlic, and cumin seeds and sauté until onions are browned. Add cinnamon, tomatoes, salt & pepper and continue to saute another 10 minutes.Add chicken, marinade, and stock and bring to a boil. Reduce heat and simmer for 30 minutes. Meanwhile, grind almonds in a spice grinder or food processor.Stir in 1 teaspoon Tomato paste and cream and simmer for another 15 minutes. During the last 5 minutes, add almonds and discard cinnamon sticks.Serve with rice and a sprinkle of cilantro.
