1 Tablespoon Brown Bean Sauce2 Tablespoons Garlic1 Bunch Water Spinach0.25 Cup Vegetable Oil1 Tablespoon Brown Sugar2 Tablespoons Fish SauceClean and drain spinach well. Trim two inches of the woody ends and discard. Trim the remaining stems into the pieces of 2 inch length and place in a bowl. Chop leaves too into 2-inch lengths and place in another bowl. Combine fish sauce, brown sugar and bean sauce in a small bowl and set aside. Heat oil on medium heat in a wok. Stir fry garlic for 10 seconds. Stir in spinach and cook for 1 minute. Add reserved sauce mixture and toss to combine. Add spinach leaves too and toss quickly until spinach begins to wilt.
