Ingredients:
2 Tablespoons Olive Oil3 Cloves Garlic1 Medium Red Onion1 Teaspoon Sea Salt1 Teaspoon Black Pepper2.5 Cups Unsweetened Almond Milk1 Teaspoon Dijon Mustard2.5 Cups Vegetable Broth1 Cup Nutritional Yeast5 Cups Broccoli1 Tablespoon Lemon JuiceHeat oil over medium heat in a large soup pot. Sauté onion for 5 minutes until translucent. Add garlic and Dijon and season with salt and pepper. Sauté a couple more minutes. Add broccoli and stir for 3 to 4 minutes. Stir in broth and milk. Bring to a boil, cover and let cook on low until broccoli is tender, for about 20 minutes. Turn the heat off and stir in lemon juice and yeast. Puree about half a cup of soup in a blender and then pour back the blended soup into the remaining soup. Serve with toasted corn bread.
