1.5 Tablespoons Kosher Salt4 Pounds Vine-Ripened Red Tomatoes1 Piece CheeseclothPuree tomatoes with salt in a blender until blended. Line a large sieve with a cheesecloth and set the sieve over a tall nonreactive pot. Pour the pureed tomatoes carefully over cheesecloth. Bring the cheesecloth ends up to form a large sack and then twist the top without squeezing the puree. Carefully tie the top with a kitchen string. Now tie the neck of the sack to a long wooden spoon, longer than pots diameter. Remove the sieve and put the wooden spoon across of opening of the kettle in such a way that the sack is hanging inside the kettle, but with enough room underneath to keep it from sitting in accumulating tomato water. Keep sack hung refrigerated for 8 hours. After that, discard the sack with its contents and transfer the accumulated water to a bowl. Serve or store in refrigerator up to 4 days.
