3.25 Cups All-Purpose Flour1.5 Teaspoons Salt1 Teaspoon Ground Nutmeg2 Teaspoons Baking Soda1 Teaspoon Ground Cinnamon3 Cups Sugar1 Cup Vegetable Oil4 Eggs0.33 Cup Water2 Cups Grated Zucchini1 Teaspoon Lemon Juice1 Cup Chopped Walnuts Or PecansPreheat the oven to 350 degrees. Grease 2 standard loaf pans.In a large bowl, mix together flour, baking soda, sugar, spices and salt. In another bowl, add zucchini, eggs, oil, water and lemon juice and beat till well combined. Add flour mixture and mix till just combined. Fold in walnuts.Divide mixture into prepared loaf pans evenly. Bake for about 1 hour or until a toothpick inserted in the center comes out clean. Remove from oven and keep onto a wire rack to cool in the pans for about 5-10 minutes. Carefully, invert the loaves of bread onto the wire rack to cool completely before slicing.
