4 Teaspoons Canola Oil1.5 Pounds Skinless & Boneless Chicken Thighs1 Tablespoon Fresh Ginger3 Garlic Cloves1 Large Shallot Thinly Sliced0.5 Cup Unsalted Chicken Stock3 Tablespoons Dark Brown Sugar1 Tablespoon Fish Sauce1 Tablespoon Fresh Lime Juice0.25 Teaspoon Kosher Salt0.25 Teaspoon Freshly Ground Pepper0.25 Teaspoon Crushed Red Pepper6 Green OnionsHeat oil in a large nonstick skillet over medium high heat. Sauté chicken for 2 minutes, turn around and sauté another minute.Combine half the stalk with brown sugar, lime juice, fish sauce, kosher salt, ground pepper and red pepper in a small bowl. Add the stalk mixture to the chicken and cook for a minute or so. Reduce heat and let cook covered over medium low until sauce thickens, for 7 minutes.Sprinkle with green onions and remove from heat. Serve.
