4 Medium Beets2 Cloves Garlic0.25 Cup Red Onion3 Small Turkish Cucumbers2 Tablespoons Sherry Vinegar0.5 Cup Fresh Dill0.5 Teaspoon Kosher Salt0.25 Teaspoon Fresh Pepper1 Medium Avocado0 Yogurt Or Sour CreamSimmer beets in a medium pot filled with water for about 45 to 60 minutes or until fork tender. Leave to cool.Chill beets along with their cooking liquid. Peel the beets off once cold and then slice. Place 3 beets (saving one) in a blender and blend with 2 cups of their cooking liquid. Add 1/8 cup of chopped onion, 2 cucumbers, garlic cloves, vinegar, ¼ cup of fresh dill and salt and pepper. Blend until creamy and smooth. Pour chilled beet soup into serving bowls. Top with avocado, chopped remaining dill, cucumber and beet. Dollop with sour cream or yogurt and serve.
