Smart Recipes, Vegetarian Recipes, Fruits & Vegetables Recipes, Recipes Fruits & Vegetables Vegetarian Chilled Beet Soup Chilled Beet Soup Recipe | PT1H Serves 4 Ingredients: 4 Medium Beets 2 Cloves Garlic 0.25 Cup Red Onion 3 Small Turkish Cucumbers 2 Tablespoons Sherry Vinegar 0.5 Cup Fresh Dill 0.5 Teaspoon Kosher Salt 0.25 Teaspoon Fresh Pepper 1 Medium Avocado 0 Yogurt Or Sour Cream Simmer beets in a medium pot filled with water for about 45 to 60 minutes or until fork tender. Leave to cool. Chill beets along with their cooking liquid. Peel the beets off once cold and then slice. Place 3 beets (saving one) in a blender and blend with 2 cups of their cooking liquid. Add 1/8 cup of chopped onion, 2 cucumbers, garlic cloves, vinegar, ¼ cup of fresh dill and salt and pepper. Blend until creamy and smooth. Pour chilled beet soup into serving bowls. Top with avocado, chopped remaining dill, cucumber and beet. Dollop with sour cream or yogurt and serve.
