Ingredients:
2 Cups Frozen Sliced Strawberries2 Tablespoons Sugar0.5 Teaspoon Orange Zest3 Cups Fresh Strawberries2 Large Eggs2 Tablespoons Butter2 Cups Milk1 Teaspoon Vanilla1 Tablespoon Sugar0.5 Teaspoon Salt1.5 Cups All- Purpose FlourIn a stand mixer, blend eggs, butter, milk, vanilla, sugar, and salt until smooth. Gradually add flour until completely blended. Refrigerate for one hour or overnight. Add sugar, 2 cups sliced strawberries, and orange zest to the thawed and pureed strawberries. Bring to room temperature before serving. Place medium skillet over medium-high heat and grease with cooking spray.
Pour 1/4 cup of the batter in skillet and tilt to evenly spread into a round thin layer.
Cook for about 1 minute, flip and cook 30 seconds more. Repeat with remaining batter.
Top crepes with strawberry filling, roll, and serve topped with whipped cream and fresh strawberries.
