1.33 Pound Sweet Potatoes2 Tablespoons Cilantro0.75 Cup Coconut Cream1 Medium Onion1 Tablespoon Thai Green Curry Paste1 Tablespoon Peanut Oil1 Medium EggSauté peanut oil, curry paste and onion in a medium pan over medium heat for about 1 minute. Add in coconut cream and sweet potato, cover and let simmer for about 10 minutes. Mix in cilantro, turn the heat off and let cool a little. Preheat oven to 350 F. Cut rounds out of the pastry using a glass or a cutter and place 2 to 3 tablespoons of sweet potato mixture over the pastry circles. Sandwich each circle with another circle. Brush edges with egg and then press the edges to seal. Bake on a lined baking sheet until golden about 20 minutes.
