1 Cup Brown Sugar0.5 Cup Salted Butter1.5 Cups Creamy Peanut Butter1 Tablespoon Vanilla Extract3 Large Eggs1.5 Cups Quick Oats1 Teaspoon Baking Soda2.5 Cups Old-Fashioned Oats1 Cup Mini Candy Coated Chocolates1 Cup Mini Chocolate Chips1 Cup Granulated SugarHeat oven to 350 degrees F. Line a cookie sheet with parchment paper.
In a large mixing bowl, cream together peanut butter, sugars and butter using an electric beater until pale in color. Add in vanilla and eggs and blend. Add baking soda and oats and mix using a wooden or rubber spatula. Fold in chocolate chips and candy coated chocolates (save some for topping) and stir to combine. Spread prepared mixture over cookie sheet and smoothen with the back of spoon. Sprinkle with some chocolate chips and candy coated chocolates. Press slightly to insert into the dough. Bake until edges are lightly brown but middle is still undone, for 18 to 20 minutes. Let cool a little before serving.
