5 Pound Turkey Breasts1 Large Apple0.5 Cup Dried Cranberries0.5 Cup Walnuts1 Cup Mushrooms6 Slices Bacon1 Tablespoon Fresh Rosemary0.5 Tablespoon Fresh Thyme1 Tablespoon Fresh Sage0.25 Cup Vegetable Oil1.5 Teaspoons Salt & Freshly Ground Black PepperPreheat the oven to 350 degrees. Meanwhile with a sharp knife butterfly the breast until it open flat. Wrap the breast in between sheets of plastic wrap and flatten with a meat mallet.In a bowl of a food processor, combine the apple, dried cranberries, walnuts, mushrooms, bacon and herbs and 1/2 teaspoon of salt and pepper, and pulse to combine.Spread the stuffing in a thin layer, up to 1/4 inch from the edge, on top of the turkey breast. Roll up the turkey breast and truss with cooking twine. Season with the remaining salt & pepper.Heat the oil in a large Dutch oven over medium high heat, and brown the turkey, about 3 minutes per side. Transfer the Dutch oven to the preheated oven, and bake for about 50 minutes. Allow the turkey rolls to rest for 10 minutes before serving.
To make this recipe a bit easier I suggest you have your butcher butterfly your turkey breast. While I can butterfly a breast, I find it easier to have it already done for me. Also for this recipe you will need some cooking twine to help truss up the bird, a small spool should do the trick.
