1 Package (10-Ounce) Steam-In-Bag Fresh Cauliflower Florets2 Tablespoons Whole Wheat Flour0.5 Cup Onion2 Teaspoons Fresh Garlic0.66 Teaspoon Kosher Salt0.5 Teaspoon Black Pepper0.75 Cup Hash Brown Potatoes0.25 Teaspoon Lemon Rind0.5 Cup White Cheddar Cheese2 Teaspoons Olive Oil2 Large Eggs0.25 Cup Plain Greek Yogurt2 Tablespoons Canola Mayonnaise2 Tablespoons Green Onions2 Teaspoons Fresh Lemon JuicePrepare cauliflower according to packaging directions. Place steamed cauliflower in a bowl and mash using a potato masher.Add flour, rind, onion, garlic, eggs, cheese, ½ teaspoon salt and pepper. Divide mixture into 8 equal portions and then form a patty out of each portion.Heat oil in a large skillet over medium high and cook patties for 4 minutes, flip and cook the other side 4 more minutes. Whisk together yogurt, salt, scallions, mayonnaise and lemon juice in a bowl. Serve yogurt/mayonnaise sauce with fritters.
