2 Tablespoons Fresh Lime Juice2 Tablespoons Rice Vinegar1.5 Tablespoons Fish Sauce2 Teaspoons Sambal Oelek1 Teaspoon Sugar2 Cups Skinless Boneless Rotisserie Chicken Breast0.5 Cup Red Bell Pepper0.5 Cup Carrots0.33 Cup Shallots1 Tablespoon Fresh Mint2 Tablespoons Fresh Cilantro Leaves0.5 Cup Chopped Unsalted Dry-Roasted PeanutsFill a large bowl half way with very hot water. Add noodles, cover and let sit for 15 minutes. In a bowl, combine lime juice with vinegar, sugar, fish sauce and sambal oelek and stir until sugar dissolves. In another bowl, combine chicken with bell pepper, carrots, shallots, cilantro and mint and toss well. Drain noodles well and rinse through cold water. Squeeze away any excess water. Toss noodles with chicken mixture. Drizzle with vinegar mixture, top with peanuts and serve.
