Mix in yeast and let rest covered for a few minutes until yeast completely dissolves. Add in flour, salt, and butter. Attach the bowl to the mixer along with dough hook and mix for about 1 minute at speed 2. Dough has to be sticky at this moment. Grease a large bowl with oil and place dough in it. Turn the dough to coat all over with oil. Place the bowl in a warm place to rise until doubled or for about 1 hour. Grease a large baking sheet with nonstick spray and dust with cornmeal, dust off excess cornmeal. Once the dough is doubled in size, punch it down and halve it. Put both the loaves over greased baking sheets and leave covered another hour in a warm place to rise more. After the hour has passed, preheat your oven to 450 degrees F. Make diagonal cut using a sharp knife on top of the loaves. Bake for about 25 minutes. Whisk together egg white and water in a small bowl. After 25 minutes, remove loaves from oven, brush with egg mixture and then bake again for 5 more minutes. Cool completely on wire racks and serve.
