0.25 Ounce Fresh Thyme1 Large Russet Potato6 Ounces Green Beans0.5 Tablespoon Olive Oil0 To Taste Salt And Freshly Ground Black Pepper0.5 Cup Warm Water1 Tablespoon Beef Base4 Pats Butter1 Medium Beef Tenderloin1 Slice Bacon4 Ounces Cremini Mushrooms1 Clove Garlic1 Tablespoon Tomato Paste0.5 Cup Red Cooking Wine0.5 Cup Pearl Onions1 Tablespoon Cold Water1 Tablespoon Flour2 Teaspoons Whipping Cream6 Medium ChivesIn a large pan of water, add potatoes and bring to a boil. Cook for about 20 minutes and drain well. Return the potato in the pan and keep aside, covered to keep it warm.In another pan of boiling water, cook green beans for about 1 minute. Drain well and transfer into a bowl. Discard the stems of thyme and chop the leaves. Add half of the thyme, ½ tablespoon of oil, salt and black pepper and toss to coat well. With a plastic wrap, cover the bowl and keep aside.For broth: In a bowl, add the warm water and beef base and stir to combine. Keep aside.Heat a large skillet on medium-high heat and melt 2 butter pats. Sprinkle the beef with salt and black pepper evenly. Add beef and sear for about 5 minutes or till browned completely. Transfer the beef onto a plate and keep aside. In the same, skillet, add bacon and stir fry for about 1 minute. Stir in mushrooms and cook for about 5 minutes. Stir in remaining thyme, garlic and tomato paste till well combined. Add wine and increase the heat to high and boil for about 1 minute. Add broth and onions and bring to a boil.Meanwhile in small bowl, mix together cold water and flour. Slowly, add the flour mixture in skillet, stirring continuously. Bring to a boil and cook for about 1 minute. Stir in the cooked beef and cook for about 2 minutes or till desired thickness of sauce. Stir in salt and black pepper and remove from heat.In the pan of potatoes, add whipping cream, remaining butter, salt and black pepper and mash completely. Divide mashed potatoes in serving plates and top with beef mixture alongside the green beans. Serve with the garnishing of chives.
