Beef Bourguignon With Smashed Potatoes & Herbed Green BeansPT1H5M Serves 2 Ingredients: 0.25 Ounce Fresh Thyme 1 Large Russet Potato 6 Ounces Green Beans 0.5 Tablespoon Olive Oil 0 To Taste Salt And Freshly Ground Black Pepper 0.5 Cup Warm Water 1 Tablespoon Beef Base 4 Pats Butter 1 Medium Beef Tenderloin 1 Slice Bacon 4 Ounces Cremini Mushrooms 1 Clove Garlic 1 Tablespoon Tomato Paste 0.5 Cup Red Cooking Wine 0.5 Cup Pearl Onions 1 Tablespoon Cold Water 1 Tablespoon Flour 2 Teaspoons Whipping Cream 6 Medium Chives In a large pan of water, add potatoes and bring to a boil. Cook for about 20 minutes and drain well. Return the potato in the pan and keep aside, covered to keep it warm. In another pan of boiling water, cook green beans for about 1 minute. Drain well and transfer into a bowl. Discard the stems of thyme and chop the leaves. Add half of the thyme, ½ tablespoon of oil, salt and black pepper and toss to coat well. With a plastic wrap, cover the bowl and keep aside. For broth: In a bowl, add the warm water and beef base and stir to combine. Keep aside. Heat a large skillet on medium-high heat and melt 2 butter pats. Sprinkle the beef with salt and black pepper evenly. Add beef and sear for about 5 minutes or till browned completely. Transfer the beef onto a plate and keep aside. In the same, skillet, add bacon and stir fry for about 1 minute. Stir in mushrooms and cook for about 5 minutes. Stir in remaining thyme, garlic and tomato paste till well combined. Add wine and increase the heat to high and boil for about 1 minute. Add broth and onions and bring to a boil. Meanwhile in small bowl, mix together cold water and flour. Slowly, add the flour mixture in skillet, stirring continuously. Bring to a boil and cook for about 1 minute. Stir in the cooked beef and cook for about 2 minutes or till desired thickness of sauce. Stir in salt and black pepper and remove from heat. In the pan of potatoes, add whipping cream, remaining butter, salt and black pepper and mash completely. Divide mashed potatoes in serving plates and top with beef mixture alongside the green beans. Serve with the garnishing of chives.
