0.5 Cup Vegetable Oil0.5 Pound Snake Beans0.5 Pound Green Prawns1 Large Red Bell Pepper1 Yellow Onion2 Large Eggs1.5 Tablespoons Madras Curry Powder0.5 Pound Rice Vermicelli Noodles2 Cups Fresh Bean Sprouts0.25 Cup Soy Sauce1 Small Bunch Freshfresh Cilantro Leaves1 Medium LimeIn a large skillet over medium-high heat, heat 1 tablespoon oil and sauté snake beans until tender-crisp, about 5 minutes. Transfer to a small bowl and set aside.Add prawns to the skillet, stir-fry for 2 minutes and transfer them to a large plate. Set aside.Pour 2 tablespoons of oil into the skillet and sauté bell pepper and onions until onions are translucent, about 3 minutes. Transfer to a small bowl and set aside.
Reduce heat to medium-low and add eggs to the pan. Swirl eggs around to form a thin omelet. Cook for about 2 minutes and slice into thin slivers. Transfer to a small plate and set aside.Increase heat to medium-high. Add remaining oil to the pan and stir in the noodles & curry paste and stir-fry for 1 minute. Combine prawns, vegetables, & snake beans and cook until noodles are al dente, about 5 minutes. Pour soy sauce and omelet slices into the noodle mixture and stir to combine. Top with cilantro leaves & lime wedges before serving.
