0.25 Cup Pumpkin Seeds0.25 Cup Extra Virgin Olive Oil3 Tablespoons Lemon Juice0 To Taste Salt And Freshly Ground Pepper1 Cup Loosely Packed Whole Leaf CilantroHeat a large skillet on high heat. Add pumpkin seeds and cook, stirring continuously for about 4-5 minutes. Remove the skillet from the heat and add the olive oil and lemon juice, salt and black pepper and beat well.
Cut the escarole on the bias and divide into 4 serving plates. Top with cilantro evenly and drizzle with the salad dressing and serve.
