Remove from heat and add noodles and veggie and keep aside for about 10 minutes. In a small bowl, mix together cornstarch and water. In another small bowl, add cornstarch mixture, 2 tablespoons of soy sauce, broth, mirin and sugar and mix well. Keep aside. In a small pan, add ginger, chili garlic paste and remaining soy sauce and simmer for about 2 minutes. Add remaining sauce ingredients and simmer for about 2-3 minutes, stirring occasionally. Remove from oven and keep aside to cool slightly. In a blender, add ginger mixture and pulse till smooth. Drain noodles and veggies and return to pan. Add sauce and stir to combine before serving.
