1 Tablespoon Olive Or Vegetable Oil1 Medium Tomato2 Cups Fresh Parsley1 Teaspoon Garlic0.25 Teaspoon Black Pepper0.5 Small Cucumber2 Teaspoons Dried Mint1 Teaspoon Salt6 Scallions1 Cup Bulgur Wheat0.33 Cup Lemon Juice1 Cup Fresh Pomegranate SeedsIn a large bowl, mix together 2 cups of hot water and bulgur and keep aside for about 20-30 minutes or until the water is absorbed completely. Add lemon juice, oil, garlic, mint, salt and black pepper and mix until well combined. Add cucumber, parsley, tomato and scallions, pomegranate seeds and toss to coat well. Refrigerate, covered for at least 1 hour before serving.
