Ingredients:
4 Medium Lamb Shanks1.5 Cups Carrot1 Can Cannellini Beans1 Cup Onion2 Cloves Garlic0.75 Cup Celery2 Teaspoons Dried Tarragon1 Can Diced Tomatoes0.5 Teaspoon Salt0.25 Teaspoon Freshly Ground Black PepperPlace beans, onion, garlic cloves, carrot and celery in a 7-quart electric slow cooker. Mix to combine ingredients well. Place lamb over bean mixture, sprinkle with salt, pepper and tarragon. Top with tomatoes and cook on high for 1 hour. Turn the heat down to low and cook until lamb is very tender or for 9 hours.Transfer lamb to a shallow plate. Sieve bean mixture into a bowl, reserving liquid. Let stand the liquid for about 5 minutes. Remove fats from top of the liquid using slotted spoon. Add the bean mixture back to the liquid. Remove bones from lamb and discard bones. Serve together lamb and bean mixture.
