1.5 Tablespoon Flaxseed Meal4 Tablespoons Water0.25 Cup Maple Syrup0.25 Cup Olive Oil0.75 Cup Pumpkin Puree0.66 Cup Brown Sugar2 Tablespoons Ripe Banana0.5 Teaspoon Sea Salt0.5 Teaspoon Ground Cinnamon2 Teaspoons Baking Soda1 Teaspoon Pumpkin Pie Spice1 Cup Gluten Free Rolled Oats0.5 Cup Water0.5 Cup Almond Meal1.25 Cups Gluten Free Flour Blend3 Tablespoons Raw PepitasPreheat oven to 375 degrees F. Lightly grease a loaf pan with cooking spray or line with parchment paper. Combine flax meal and water in a bowl and mix to combine. Add in pumpkin, maple syrup, banana and olive oil and mix to combine. Then whisk in brown sugar, salt, baking soda, pumpkin pie spice and cinnamon. Add water and mix well. After that, add oats, flour blend and almond meal and stir. The resulting consistency of this mixture has to be pourable and semi thick. If it’s thinner then add one more flour blend. Pour mixture into the loaf pan and top with pecans. Bake until deeply golden browned or for about 40 to 47 minutes. Leave to cool for 10 minutes once baked. Lastly, take out over a plate and cool completely. Slice gently once completely cooled and serve.
