6 Cups Shell Pasta2 Tablespoons Butter3 Tablespoons Flour2 Cups Milk4 Ounces Smoked Gouda0.5 Cup Prepared Pesto4 Ounces Smoked Fontina0.33 Cup Sun Dried Tomatoes0.75 Cup Sweet Corn0.125 Tablespoon Salt & Black PepperCook pasta in salted water according to package directions, less than 2 minutes of cooking time. Drain well and keep aside.
In large sauce pan, melt butter on medium-high heat. Slowly, add in flour, beating continuously. Cook, beating continuously for about 2 minutes. Add milk and beat continuously to avoid any clumps. Cook, stirring occasionally for about 2-3 minutes or till mixture becomes thick.
Reduce the heat to medium-low. Add cooked pasta, both cheeses, pesto, sun-dried tomatoes, corn, salt and pepper to taste and cook for about 2-3 minutes or till heated through. Garnish with herbs and serve immediately.
