Smart Recipes, American Recipes, Eggs,Grains Recipes, Recipes Eggs,Grains American Blueberry Butter Cookies PT40M Serves 12 Ingredients: 1 Cup Unsalted Butter 1.33 Cups Light Brown Sugar 0.5 Cup Granulated Sugar 2 Teaspoons Vanilla Extract 2 Large Eggs 3 Cups All -Purpose Flour 1 Teaspoon Salt 1 Teaspoon Baking Soda 1 Cup White Chocolate Chips 1.5 Cups Fresh Blueberries 0.25 Cup Sesame Seeds In a small saucepan over medium-high heat, melt butter and continue stirring until lightly brown, 2-3 minutes. Pour into a small bowl and set aside to cool. In a stand mixer on high speed, add cooled butter and sugar and mix until creamy, 1-2 minutes. Add vanilla & egg and beat until combined. In another large bowl, mix flour, salt & baking soda. Add the flour mixture gradually to the egg mixture until just combined. With a spatula, gently fold in chocolate chips and blueberries. Cover dough and refrigerate for at least 2 hours or overnight. Preheat the oven to 325 degrees. Line sheet pan with Silpat or parchment paper. With a medium scoop, drops scoops of dough on prepared sheet pan about 2 inches apart, sprinkle with the sesame seeds and bake until blueberries have popped and edges are golden brown, 17-19 minutes. Transfer cookies to wire rack to cool.

These cookies are finished with a sprinkle of seasme seeds before going into the oven; I sometimes use the seeds and sometimes I don't. The result is great either way.
