1.25 Cups Flour4 Eggs6 Medium Oranges1 Cup Sugar1 Tablespoon Baking Powder0.5 Teaspoon Salt0.33 Cup Extra-Virgin Olive OilPreheat oven to 350 degrees. Grease a 9-inch round cake pan with cooking spray. Zest all oranges with a knife and juice one orange in a small bowl. Set remaining oranges aside for another use. Beat eggs and salt together in a large mixing bowl attached with electric mixer about 2 minutes until light and frothy. Gradually add sugar and mix 2 more minutes until well-combined. Sift together flour and baking soda in a bowl, add gradually to the egg mixture and beat 1 more minute. In another bowl, mix orange zest, juice and olive oil. Fold this into the egg mixture using a spoon. Pour prepared mixture into the greased pan and bake in preheated oven for about 50 minutes. Let cool a little, cut into wedges and serve.
