2 Onions2 Green Chillies0.5 Teaspoon Chilli Powder2 Tablespoons Fresh Coriander Sprigs0.5 Teaspoon Lemon Juice1 Teaspoon Cumin Seeds0.5 Teaspoon Ajwain6 Tablespoons Chickpea Flour0.5 Teaspoon Salt1 Oil2 Tablespoons WaterCombine onions with green chilies, fresh coriander, chili powder, cumin seeds, ajwain and lemon juice in a large bowl. Sift together chickpea flour and salt in another bowl. Heat a deep frying pan with plenty of oil over medium heat until a drop of prepared mixture drizzled over it sizzles and floats. If the oil is not heated the drop will sink and if it’s overheated, the drop will scorch. Now, gradually add flour-salt mixture to the onion mixture and mix well until sticky. Add water and mix until combined. Add tablespoonfuls of the mixture carefully into the heated oil, just enough at a time with a 1 to 2-inch space between them, or they will become soggy. Cook until cooked through and nicely golden on the outside. Remove on paper towels. Repeat with the remaining mixture.
