Sift together chickpea flour and salt in another bowl. Heat a deep frying pan with plenty of oil over medium heat until a drop of prepared mixture drizzled over it sizzles and floats. If the oil is not heated the drop will sink and if it’s overheated, the drop will scorch. Now, gradually add flour-salt mixture to the onion mixture and mix well until sticky. Add water and mix until combined. Add tablespoonfuls of the mixture carefully into the heated oil, just enough at a time with a 1 to 2-inch space between them, or they will become soggy. Cook until cooked through and nicely golden on the outside. Remove on paper towels. Repeat with the remaining mixture.
