Mandelbrot is a German advent dish which means “almond bread”. However, this updated version replaces almonds with pecans. Just like the biscotti, the baked bread is sliced and baked again until crisp. Line a large baking sheet with a parchment paper. In a bowl, sift together flour, baking soda and baking powder. In a bowl of electric mixer, fitted with the paddle attachment, add eggs, oil, 1 cup of sugar, vanilla extract and salt and mix on medium-low speed until well combined. Add flour mixture and mix on low speed until just combined. Fold in pecans. Divide dough into 3 equal sized portions. Make a 3-inch wide and 1-inch high log from each portion. Arrange logs on a prepared baking sheet about 4-inch apart. Bake logs for about 35 minutes. Remove from oven and keep on a wire rack for about 3-5 minutes. Meanwhile, in a bowl, mix together remaining 1/4 cup of sugar and cinnamon. Transfer logs onto a cutting board. With a serrated knife, gently cut each log into 1/2-inch thick slices. Transfer slices on the parchment lined baking sheets and sprinkle with cinnamon sugar. Bake for about 15 minutes.
