Mandelbrot is a German advent dish which means “almond bread”. However, this updated version replaces almonds with pecans. Just like the biscotti, the baked bread is sliced and baked again until crisp. Smart Recipes, European Recipes, Eggs Recipes, Recipes Eggs European Pecan Mandelbrot Pecan Mandelbrot Recipe | PT1H10M Serves 12 Ingredients: 0.75 Cup Vegetable Oil 1.25 Cups Sugar 3 Large Eggs 0.75 Teaspoon Coarse Salt 1 Teaspoon Pure Vanilla Extract 3 Cups All-Purpose Flour 1 Teaspoon Baking Powder 1 Teaspoon Baking Soda 1 Cup Pecans 1 Teaspoon Ground Cinnamon Preheat the oven to 350 degrees. Line a large baking sheet with a parchment paper. In a bowl, sift together flour, baking soda and baking powder. In a bowl of electric mixer, fitted with the paddle attachment, add eggs, oil, 1 cup of sugar, vanilla extract and salt and mix on medium-low speed until well combined. Add flour mixture and mix on low speed until just combined. Fold in pecans. Divide dough into 3 equal sized portions. Make a 3-inch wide and 1-inch high log from each portion. Arrange logs on a prepared baking sheet about 4-inch apart. Bake logs for about 35 minutes. Remove from oven and keep on a wire rack for about 3-5 minutes. Meanwhile, in a bowl, mix together remaining 1/4 cup of sugar and cinnamon. Transfer logs onto a cutting board. With a serrated knife, gently cut each log into 1/2-inch thick slices. Transfer slices on the parchment lined baking sheets and sprinkle with cinnamon sugar. Bake for about 15 minutes.
