0.75 Teaspoon Salt2 Tablespoons Water2 Eggs1 Tablespoon Margarine Or Butter1 Pinch Ground Nutmeg1 Pound Boiled Potatoes0 Oil Or Butter0 To Taste Salt & Black Pepper1 Pound LeeksIn a deep-frying pan, melt 1 tablespoon butter or margarine. Add leeks and water and steam the leeks till tender. In a bowl, add eggs, potatoes, nutmeg, salt and black pepper and gently, stir till well combined. Mix in leeks too. Now, heat oil or butter in the same frying pan for frying. Take a large spoonful of mixture, place in the frying pan and flatten to form small round galette. Fry till golden brown from both sides. Repeat with remaining mixture. Serve these galettes with seasonal salad.
