Smart Recipes, Mexican Recipes, Beef Recipes, Recipes Beef Mexican Fajita Burgers Fajita Burgers Recipe | PT1H10M Serves 4 Ingredients: 1 Pound Ground Beef 0.5 Cup Red Onion 0.75 Cup Fresh Cilantro 0.25 Cup Scallions 2 Teaspoons Garlic 1 Teaspoon Cumin 1 Tablespoon Chili Powder 0.5 Teaspoon Dried Oregano 0.25 Teaspoon Salt 0.5 Teaspoon Freshly Ground Black Pepper 0.33 Cup Mayonnaise 1 Tablespoon Chipotle Chile In Adobo 1 Tablespoon Lime Juice 0.5 Cup Monterey Jack Cheese 2 Medium Roasted Anaheim Or Poblano Peppers 1 Cup Green Cabbage 4 Slices Red Onion 4 Slices Tomatoes Preheat the grill over medium high heat. Preheat the oven to 450 degrees F. On a large baking sheet place a wire rack and place pepper over wire rack. Roast peppers until black spots are seen, for 30 to 40 minutes. Keep turning occasionally using tongs so they are blackened all over. In a large bowl, mix together beef, onion, ¼ cup cilantro, scallions, oregano, garlic, cumin, chili powder, salt and pepper. Mix using your hand until just combined and evenly incorporated. Divide into four equal portions and form each portion into a ½ inch thick patty. Shape them oval or round, according to your rolls. In a separate small bowl, combine mayonnaise, chipotle, lime juice and half cup cilantro. Oil the grill pan and grill the patties for about 6 minutes per side. Place cheese slice over each burger and heat until cheese begins to melt, no more than 1 minute. Place grilled patties over toasted rolls, dollop chipotle mayonnaise, place cabbage, onion, tomato and roasted pepper. Serve.
