0.5 Cup Whipping Cream0.75 Cup Dry White Wine3 Pounds Whole Chicken1 Teaspoon Salt & Freshly Ground Black Pepper40 Cloves Garlic0.5 Cup Chicken StockPreheat the oven to 450 degrees. Arrange a rack in a roasting pan. With paper towels, pat the chicken dry completely. Season the chicken with salt and pepper. Place chicken on the rack in a roasting pan. Place 40 garlic cloves around the chicken. Place the roasting pan in the oven and immediately, reduce the temperature of the oven to 350 degrees. Bake for about 20 minutes.Remove from the oven and place wine over the chicken evenly. Roast for about one hour, basting with pan liquid every 10 minutes. Remove from the oven and transfer chicken to a cutting board. For the sauce: In a small pan, add chicken stock and cream. Remove garlic cloves from the roasting pan and press into the sauce, discarding the peels. Simmer for a few minutes, stirring continuously. Stir in salt and black pepper and remove from the heat.Carve chicken and serve with the sauce.
