0 To Taste Salt1.5 Teaspoons Bayou Blast1 Cup Mayonnaise1 Tablespoon Capers1 (1-Pound) Flounder Fillet0 To Taste Freshly Ground Black Pepper0 Oil1 Tablespoon Pickles0.5 Cup Flour2 Eggs0.5 Cup Cornmeal0 PotatoesFor tartar sauce: In a small bowl, add mayonnaise, pickles, capers, 1 1/2 teaspoons of Bayou Blast and mix until well combined. Season flounder with salt and black pepper inside and out.In 1 shallow bowl, place seasoned flour. In a second bowl, beat eggs. In a third bowl, mix together cornmeal and 1 tablespoon of Creole spice.Coat flounder with flour and then, dip in eggs. Add any remaining flour to cornmeal mixture. Finally, coat flounder with cornmeal mixture evenly. In a deep-fryer, heat oil to 370 degrees and deep-fry flounder for about 3-4 minutes, flipping once or twice.Transfer flounder onto a paper towel-lined plate to drain. Serve flounder alongside tartar sauce and fried julienned potatoes.
