0.25 Teaspoon Salt3 Tablespoons Olive Oil2 Pounds Flounder1 Teaspoon Garlic1 Tablespoons Italian Seasoning2 Tablespoons Italian Parsley0 To Taste Ground PepperIn a bowl, mix together oil, garlic, herbs, salt and black pepper and set aside for up to 2 hours, to allow the flavors to marry. Rinse flounder fillets well, and with paper towels, pat dry completely. Slash the thicker part of fish by making 1-2 deep diagonal cuts into the meat. Reserve 1 tablespoon of oil mixture. Rub fish fillets with remaining oil mixture evenly. Set aside for about 15 minutes. Preheat charcoal grill to medium-high heat and grease grill grate. Place fish onto grill, dark-skin side down and grill for about 4 minutes. Flip the side and coat with any remaining oil mixture and grill for about 2-4 minutes more.
