Ingredients:
2 Cups All-Purpose Flour1 Cup Butter3.5 Ounces Flaked Coconut1 Large Egg0.5 Teaspoon Vanilla Extract0.5 Cup Granulated Sugar0.75 Teaspoon SaltPreheat oven to 300 F.
Layer coconut flakes on an ungreased cookie sheet and toast for about 25 minutes or until lightly golden in color. Remove from oven and set aside.
Increase oven temperature to 350 degrees F.
Mix the sugar and butter in a large mixing bowl until light and fluffy. Whisk in vanilla and eggs. Fold in flour and salt and stir to just combine. Gently fold in most of the candy coated chocolates (leaving some for the topping).Roll dough into 1¼ inch balls and then coat balls with toasted coconut flakes. Place balls on greased cookie sheet. Make an indentation over the balls using your thumb. Bake until coconut is golden brown or for 10 to 12 minutes.Place left over candies over the indentation right after you remove from the oven. Cool completely and serve.
