0.75 Pound Skinless Boneless Salmon2.5 Cups Filtered Water1 Tablespoon Plum Miso Or Brown Rice Miso3.5 Ounces Sunflower Seeds2 Cloves Garlic1 Stalk Celery0 To Taste Sesame Oil1 Tablespoon Corn Meal3 Tablespoons Olive OilWhisk miso with water, add in celery and 1 garlic clove. Bring to a boil over medium-high heat. Boil for 1 minute and then remove from heat. Place cornmeal on a plate and coat one side of the salmon fillet with cornmeal. Heat 1 tablespoon olive oil over medium heat in a nonstick pan and place fillet, cornmeal side down, over the pan. Sauté until lightly brown, flip and sauté 2 to 3 minutes or until still pink from inside. Set aside keeping warm.
Heat remaining olive oil in another pan and sauté remaining garlic clove for a minute. Add in watercress and 1 tablespoon of miso broth. Cover and cook on low for 30 seconds. Take out watercress in a soup bowl, place salmon on top, drizzle rewarmed miso broth and a few drops of sesame oil. Garnish with chives and serve.
