Ingredients:
2 Medium Eggs1 Cup Dark Brwon Sugar1.25 Cups Sugar1 Teaspoon Vanilla1 Cup Creamy Peanut Butter1.5 Cups Butter Flavored Crisco2 Cups All Purpose Flour0.5 Teaspoon Salt2 Cups Quick Oats1 Teaspoon Baking Soda2 Cups Milk Chocolate Chips1 Cup White Confectionary CoatingPreheat oven to 350 degrees F. Prepare Cookies: Beat together 1 cup each Crisco, brown sugar and sugar in a large bowl until well blended. Add in eggs, vanilla, peanut butter, baking soda and salt. Beat for about 2 minutes or until well combined. Gradually stir in flour and oats. Your dough is ready. Now measure ¼ cup of dough and shape it into a ball. Repeat until whole dough is gone. Place ¼ cup sugar in a shallow dish and roll balls in sugar. Place balls spacing apart over an ungreased cookie sheet. Flatten slightly into 4 inch circles and bake for about 10 minutes. Make the cookies look like mini pizza crust by flattening the center of hot cookies with back of a spoon keeping the edges up, just like pizza. Prepare Pizza Sauce: combine chocolate chips and half cup Crisco in a microwave safe large bowl. Microwave until chips are smooth and shiny, 2 to 3 minutes. Pour chocolate equally over each cookie and then spread to the edge. Pipe melted confectioners coating over the chocolate. Sprinkle any desired topping such as M&Ms, gummy bear or nuts.
